When you occasionally find crystallized ginger, you cannot but buy it. Then it remains for a while on the shelf, staring at you when you open the door, saying “please, use me!”. I used to answer “sorry, my dear, I don’t know what could I do with you!”…. Finally, browsing one of my favourite blogs, I eventually find the recipe of a Zingy Orange Ginger Carrot Cake with White Chocolate Icing, which contains the famouscrystallized ginger!! Et voila!!

During last spring I attended some nice “dinner+movie” evenings organized by a group of young people living in Luxembourg (http://www.facebook.com/#!/riff.luxembourg) and I tasted this fabulous dessert. The theme was “Baltic Countries”, but this should be an Austrian recipe. Whatever…just try it, it’s definitely worthy!
