Gateau au caramel et aux noix de pécan
The calendar I have on my office desk provides me one recipe a day and sometime it’s very hard to work with temptating images of delicacies right next to the screen!
The same happens when I have someone working with me at my desk: you can see the eyes looking more and more to the photo instead of the screen and at the end comes the “why don’t you bake this cake for next monday??”.
And so here we are: Gateau au caramel et aux noix de pécan directly from the calendar on my desk! Believe me, it’s worthy!

Ingredients :
170g brown sugar (moscovado, cassonade en français !)
90f all purpose flour
1 coffee spoon baking powder
75g butter
1 egg
75g pecan nuts (roughly chopped)
1 coffee spoon vanilla extract
2 pinches of salt
Instructions :
In a pan heat the butter and the sugar very slowly, until reaching a caramel. Put in bowl and leave it to cool for 10-15 minutes. Mix to make sure that it is well combined. Add the egg and mix well. Sift the flour, the baking powder and the salt in the bowl and mix well to combine. Add the vanilla extract and the pecan nuts.
Butter a baking pan and sprinkle with flour. Pour the mixture in the pan and bake in preheated oven at 160°C for 25 minutes. Cut in pieces when it’s still hot and let it cool before serving.
