Ferrero Rocher Cheesecake
I found this recipe on a blog and I thought it was amazing: it’s simple to make and needs no baking….and it’s full of Ferrero Rocher and chocolate…how can this not be wonderful?? Just try it and you will miss it during summer time when Rochers are not available!

Ingredients:
For the crust:
300g cookies (i.e Digestive)
130g melted butter
For the cream:
360g dark chocolate
200g ricotta
14 Ferrero Rocher
4 eggs
160g white sugar
1 pinch of salt
For the decoration:
Ferrero Rocher
chopped hazelnuts q.b.
Instructions:
Put in the mixer the digestive and make them in thin crumbs. Mix them in a bowl with melted butter. Put the mixture in a cake pan (26 cm round) covered with baking sheet and press it to create a firm crust. Put the mould in the fridge while you prepare the filling.
Beat with the electric mixer the eggs yolks with the sugar until they are light and soft, add ricotta and mix well. Then add the melted chocolate and the Rocher chopped in the mixer. Beat the eggs whites with a pinch of salt until firm and add to the mixture, mixing slowly with a spatula.
Pour the cream over the refrigerated crust and level well the surface. Put in the fridge for at least to hours, decorate with Rocher and chopped hazel nuts before serving.
